If you've looked at the ingredients list of our Protein Bars or a bag of ProGranola, you've probably noticed the first ingredient: Soluble Dextrin Fiber (Tapioca), IMO Free. It's the foundation that lets us build bars and ProGranola clusters that are high in fiber and high in protein, without the tradeoffs that come with cheaper fiber sources. Here's why we chose it, and why it matters more than most labels let on.
What is Soluble Tapioca Fiber?
Soluble corn and tapioca fibers (sold commercially as resistant dextrins) are made by gently processing tapioca starch until it becomes a fiber your body can't fully break down. Because it starts as tapioca — not wheat, corn syrup solids, or synthetic additives — it's naturally gluten-free and easy to formulate into clean-label products. It dissolves smoothly, has almost no taste of its own, and holds up well in both a baked bar and a toasted granola cluster, which is exactly what we need across both product lines.
Why We Say "IMO Free"
Isomaltooligosaccharide (IMO) is a different type of fiber, often derived from cornstarch, that became popular in protein bars over the last decade because it's cheap and boosts the fiber number on a nutrition label. The problem: independent research has increasingly shown that IMO is more digestible than it was originally marketed to be. Studies looking at blood sugar and insulin response after IMO consumption have found meaningful glucose and insulin spikes, and multiple analyses have concluded that IMO behaves more like a slowly digestible carbohydrate than a true non-digestible fiber. The FDA itself has repeatedly declined to formally recognize IMO as a dietary fiber for labeling purposes.
What that means in practice: a bar built on IMO can look "high fiber, low net carb" on paper while actually delivering more usable sugar and calories than the label suggests. This poses a real problem if you're watching your carb intake or managing your blood sugar.
We chose soluble tapioca fiber instead because it doesn't have that same asterisk. It's a more honest fiber, which means the fiber and net carb numbers on our label are numbers you can trust. "IMO Free" is therefore a quality standard.
Why Fiber and Protein Together Matters
Most snack foods give you one or the other. A protein bar with no fiber will spike your blood sugar and leave you hungry again in an hour. A "high fiber" snack with no protein won't keep you full through a workout or a long afternoon. Pairing the two gives you a more complete nutritional profile in one snack: fiber to slow digestion and support satiety, protein to support muscle repair and keep you fuller for longer. It's a formulation choice that makes a real difference in how a food actually functions in your day.
Why These Lines Are Keto-Friendly
Because soluble tapioca fiber is low-impact on blood sugar and doesn't carry IMO's hidden digestible-carb problem, both our Protein Bars and ProGranola line fit cleanly into a keto or low-carb lifestyle. Combined with ingredients like Monk Fruit Extract for sweetness (instead of sugar or maltodextrin) and real, whole-food fats and proteins (organic peanut butter, roasted peanuts, sesame seeds, pumpkin seeds, chia, etc.) you get a snack that supports a low-carb way of eating without relying on synthetic sweeteners or fiber sources that don't hold up to scrutiny.

I would like to ask you, have you ever consider to do use Allulose in your products???. It is one of a kind sweetener, an amazing and rare “sugar” that has no impact in blood sugar at all, block the absorption of carbohydrates, fructose and starches, mimic naturally GLP-1 and has so many other properties that Monk Fruit doesn’t have (monk fruit is very good sweetener, but Allulose is quite the best). I hope you could consider it in the future, I believe it could make your products real a great functional snack and food.
I want to congratulate you because you have one of the best, delicious and healthy granola, protein bars, crackers, etc in the market, I really trust in your products. Love your Progranola and Protein Bars (I hope someday you could made again your Chocolate White Eggs Protein, the taste and texture were by far better than the pea protein that you have actually).
