Why Protein Is Fundamental

March 4, 2026Gerardo Gomory

When it comes to building a better plate, few nutrients matter more than protein. At Julian Bakery, protein isn’t just a macro we add to a label, it’s a foundation for how we formulate our products. Here’s why it matters, how it works, and where it’s headed next.

Protein plays a structural and functional role in nearly every system of the body.

  • It supports muscle repair and maintenance
  • Helps regulate hormones and enzymes
  • Contributes to immune function
  • Promotes satiety and blood sugar stability

Unlike carbohydrates and fats, protein is uniquely tied to structure: your muscles, skin, enzymes, and even parts of your immune system are built from it. That’s why adequate daily intake is essential.

What Is a Complete Protein?

Proteins are made up of amino acids, often called the “building blocks” of protein. Of the 20 amino acids your body uses, nine are considered essential, meaning your body cannot produce them on its own. You must get them from food.

complete protein contains all nine essential amino acids in adequate amounts.

Examples of complete proteins include:

  • Eggs (especially egg whites)
  • Dairy
  • Meat and fish
  • Soy (including tempeh and tofu)
  • Pea protein (when properly processed and formulated)

Many plant foods contain protein but are lower in one or more essential amino acids. Which brings us to amino acid complementarity…

What Is Amino Acid Complementarity?

Amino acid complementarity refers to combining different plant proteins so that together they provide all essential amino acids in sufficient amounts.

Classic examples include:

  • Rice + beans
  • Hummus (chickpeas + sesame/tahini)
  • Whole grain bread + nut butter

Grains tend to be lower in lysine but higher in methionine. Legumes are typically the opposite, higher in lysine but lower in methionine. When eaten together, they “complement” each other.

Why Egg Whites Are So Effective

Egg whites are often considered a gold standard protein source because:

  • They contain all essential amino acids
  • They are low in fat and cholesterol (cholesterol is found in the yolk)
  • They are highly digestible
  • They have a strong leucine content, important for muscle protein synthesis

Why We Use Pea Protein

At Julian Bakery, we also use pea protein because it delivers:

  • A strong amino acid profile
  • High digestibility
  • Allergen-friendly functionality (no dairy, no soy)
  • A neutral flavor

Protein, Done Intentionally

Whether it’s whey protein, egg white protein for purity and bioavailability or pea protein for plant-based performance, we formulate with purpose. Protein is a tool for building strength, supporting metabolism, and creating products that truly satisfy.

At Julian Bakery, we believe the future of protein is thoughtful, functional, and rooted in real ingredients. And that’s exactly how we build every product!
