Protein Gluten-Free Cookies, Two Ways and Protein Green Glow Smoothie

Chocolate Pistachio & Cinnamon Date GF Cookies

Indulgence and clean eating can absolutely go hand in hand. These cookies are a perfect example — soft, gooey, and decadent, yet made with wholesome, high-protein ingredients and no added sugar.

We used Organic PureMonk Ultra and our Egg White Protein Powder – Unflavored to create a gluten-free dough that’s as versatile as it is delicious. From there, we split it in two and made a couple irresistible versions:

Chocolate Pistachio — rich and nutty, with the perfect balance of crunch and melt.
Cinnamon Date — naturally sweet, spiced, and full of flavor.

Whichever you choose, you’ll be enjoying a dessert that proves clean baking can still feel like a treat.

Ingredients 

Base Dough:

Chocolate Pistachio Add-Ins:

  • 1 cup chocolate chips
  • 1⁄2 cup chopped pistachios

Cinnamon Date Add-Ins:

  • 1 tsp Ceylon cinnamon
  • 6 pitted and chopped Medjool dates

Directions

  1. Brown the Butter: Melt the butter on low heat until golden and aromatic.
  2. Mix the Wet Ingredients: In a large bowl, whisk together the brown butter, large egg, egg yolk, vanilla, and PureMonk Sweetener.
  3. Combine the Dry Ingredients: In another bowl, sift together almond flour, Egg White Protein Powder, baking soda, and salt. Add this mixture to the wet ingredients and stir until a soft dough forms.
  4. Split the Dough: Divide the dough evenly into two bowls.
  5. Add the Flavor Mix-Ins:
    1. For Chocolate Pistachio, fold in chocolate chips and chopped pistachios.
    2. For Cinnamon Date, add cinnamon and chopped Medjool dates.Chill the Dough:
  6. Chill the Dough: Refrigerate both doughs for 30 minutes to help the flavors come together and the texture set.

  7. Bake: Scoop the dough onto a parchment-lined baking sheet and bake at 350°F for 11–12 minutes, or until the edges are just golden.

  8. Cool & Enjoy: Let them cool slightly before serving. They’ll stay soft and gooey in the center — perfect with your afternoon coffee or a glass of milk.

Green Glow Smoothie

Spinach might not be the first thing that comes to mind for a sweet smoothie — but trust us, it deserves the spotlight. This blend is creamy, lightly sweet, and perfectly balanced, proving that greens can absolutely shine in a dessert-like drink.

We use our Egg White Protein Powder – Unflavored to add clean, high-quality
protein without affecting the flavor, letting the natural sweetness of banana and dates come through. Almond butter, walnuts, and cinnamon add richness and warmth, while vanilla ties everything together for that just-right touch of indulgence.

Ingredients

  • 100 ml water
  • 1 banana
  • 4 pitted Deglet Noor dates
  • 20 g walnuts
  • A handful of spinach
  • 1 tsp vanilla extract
  • 1 tsp Ceylon cinnamon
  • 1 tbsp almond butter
  • 1 scoop Egg White Protein Powder — Unflavored
  • Ice to blend

Directions

Add all ingredients to a blender with water and ice. Blend until smooth and creamy, adjusting the texture with more water or ice as needed.
