Arugula Salad with Organic Seed Cracker Crunch

A refreshing, simple salad with bold Mediterranean flavors and the irresistible crunch of Organic Seed Crackers - Parmesan.

Ingredients

  1. Rinse and dry the arugula with a salad spinner.
  2. Chop sun-dried tomatoes into bite-sized pieces.
  3. Whisk together lemon juice, EVOO, salt, and pepper for the dressing.
  4. Toss arugula, tomatoes, and dressing in a bowl.
  5. Grate fresh parmesan on top.
  6. Crush Organic Seed Crackers and sprinkle them over the salad for a crunchy finish.

Hummus & Cabbage with Muhammara Sauce

This dish takes humble cabbage to the next level, pairing it with creamy hummus, smoky-sweet muhammara, and the crunch of Organic Seed Crackers.

Ingredients

  •  ½ cabbage
  • Extra virgin olive oil (EVOO)
  • ½ cup chicken stock
  • 1 tbsp butter
  • A few sprigs of fine herbs (thyme, rosemary, or similar)
  • 1 garlic clove
  • 2 tbsp muhammara
  • Hummus (to serve)

Steps

  1. Heat EVOO in a pan and sear the cabbage until golden brown.
  2. Add butter, garlic, and fine herbs. Cook until butter melts and flavors infuse.
  3. Pour in chicken stock, cover with a lid, and let simmer for 10 minutes on low heat.
  4. Remove the herbs. Smash the garlic clove into the pan, then stir in the muhammara so it blends with the sauce.
  5. Spread hummus onto a serving plate.
