Indulge in our mouthwatering Coconut Wrap Salmon Cups! Crispy coconut wraps filled with sashimi salmon, sticky rice, and a drizzle of spicy mayo. Perfect for a flavorful and satisfying meal.
Ingredients:
(Servings: 4, 3 cups per person)
2-3 PaleoThin Coconut Wraps, cut into 4” squares
1lb Sashimi Salmon, cubed
1 C Cooked Sticky rice or Cauliflower rice for low carb option,
1 Sheet Nori, crumbled
Ingredients for Spicy Mayo:
1/2 C Mayo
1 tbsp Sriracha
1 tsp Lemon juice
1 tsp Honey
Directions:
- Preheat oven to 350F. Using a non stick muffin pan or silicone cups gently fold the coconut wrap squares into each cup. Bake for about 5 minutes or until lightly browned and crispy
- While the wraps are baking prepare the spicy mayo. In a small mixing bowl whisk the honey, mayo, sriracha and lemon juice until smooth.
- When the cups are ready portion 1 tsp of rice into each cup. Layer the rice about 4 cubes of salmon. Top the salmon with a tsp of spicy mayo and a few shreds of nori for extra crunch!
- Serve right away!
