  • 2 1/4 cups blanched almond flour
  • 1/4 cup tapioca flour
  • 3/4 teaspoons baking soda
  • 1/4 teaspoon fine sea salt
  • 3 large eggs at room temperature
  • 1/3 cup dairy-free milk
  • 1/3 cup pure maple syrup
  • 1/2 cup maple sugar or coconut sugar
  • 1/4 cup refined coconut oil, melted
  • 1 teaspoon pure vanilla extract

    1. Preheat your oven to 350°F and lightly spray a 12-well donut pan with cooking spray.
    2. In a mixing bowl, combine the almond and tapioca flours, baking soda, and salt.
    3. In a separate mixing bowl, whisk together the eggs, dairy-free milk, maple syrup, maple sugar, melted coconut oil, and vanilla extract.
    4. Stir the dry ingredients into the wet mixture until a thick batter forms.
    5. You can either use a plastic bag to pipe the batter into the prepared donut pan or use a spoon. Piping is recommended for less mess.
    6. Bake for 15 minutes or until a toothpick inserted near the center of a donut comes out clean.
    7. Remove from the oven and allow the donuts to cool for at least 5 minutes in the pan. Then, carefully release each donut and continue cooling on a wire rack.
    8. While the donuts cool, prepare your icing. Once ready, frost each donut and top with crushed ProGranola.
